Ricotta cheese is technically NOT A CHEESE, it is actually a creamy curd that is literally cooked twice and that is where “ricotta” came from meaning “recooked”.

Cows, goats and Italian water buffalos are the sources of ricotta but the best ricotta is made from sheep’s milk (like feta cheese).

When making regular cheese, there is leftover hot whey of milk and it leaves milk solids which have albumin that is the one that solidifies under high heat.

Ricotta is made from that when the albumin is re-cooked and the skimmed off.
